For a versatile, biodiverse agriculture of the future, the protein crop strategy of the Federal Ministry of Food and Agriculture (BMEL) should not only focus on well-researched raw materials, but also promote the cultivation of very promising raw materials that have been little used in Germany to date. In order to maintain our pioneering role in the research and processing of new protein sources from legumes in Germany, Leg4Future therefore aims to provide new protein ingredients from lentils and mung beans and to increase awareness and acceptance of legumes in general and lentils and mung beans in particular.
The focus of the project is on the extraction of technofunctional protein concentrates while at the same time utilizing the side streams. With the involvement of various stakeholder groups, an economical and sustainable concept for the complete utilization of lentils and mung beans is to be developed. The benefits of a legume-rich diet with a focus on the two raw materials will be made known to a broad audience of consumers and stakeholders via various communication channels. The project is accompanied by consumer studies and a networked approach to nutritional communication.
